Forget all previous conceptions of Mexican food -- this, the food of Puebla, central Mexico, is fresh, mildly spiced and thoughtfully prepared. The neighborhood looks worse than it is, and the restaurant stands out with rakish charm -- bright orange, with typically Mexican trim. Alfredo Aguilar, the owner-chef, has trained his friendly staff well. They are quick to recommend and extremely helpful. Try the tacos dorados -- crisp corn tortillas wrapped around chicken and topped with sour cream, salsa and cheese -- and the cocktail of shrimp, oysters and avocado in a footed glass. The chicken mole is a must, as is the breaded steak, sliced thinly on a roll. Vegetable sides such as rice and refried beans are much better than in many places. Naturally, finish with flan.
